Ingredients:

  • 2 medium sweet potatoes, peeled and cubed
  • 1 tablespoon olive oil
  • 1 teaspoon smoked paprika
  • Salt and pepper to taste
  • 4 cups chopped kale, stems removed
  • 1/4 cup red onion, thinly sliced
  • 1/4 cup dried cranberries or raisins
  • 1/4 cup toasted pumpkin seeds (pepitas)
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon maple syrup or agave nectar

Instructions:

  1. Preheat oven to 400°F (200°C). Toss sweet potato cubes with olive oil, smoked paprika, salt, and pepper. Spread on a baking sheet and roast for 25 minutes or until tender and lightly browned.
  2. While the sweet potatoes roast, massage the chopped kale with a pinch of salt for 2-3 minutes to soften it.
  3. In a large bowl, combine the massaged kale, red onion, dried cranberries, and pumpkin seeds.
  4. Add the roasted sweet potatoes to the bowl.
  5. Whisk together apple cider vinegar and maple syrup, then drizzle over the salad. Toss gently to combine.
  6. Serve warm or at room temperature.
