Ingredients:

🍠 For the Salad:

  • 2 medium sweet potatoes, peeled and cubed
  • 1 tablespoon olive oil

  • Salt and pepper, to taste
  • 1 can (15 oz) black beans, rinsed and drained
  • 1 cup cherry tomatoes, halved
  • 1/2 red onion, thinly sliced
  • 1 avocado, diced
  • 1/4 cup chopped fresh cilantro
  • 4 cups mixed greens or baby spinach

🥣 For the Lime-Cilantro Vinaigrette:

  • Juice of 1–2 limes
  • 2 tablespoons olive oil
  • 1 tablespoon maple syrup or agave
  • 1 tablespoon apple cider vinegar
  • 1/2 teaspoon cumin
  • 1 small garlic clove, minced
  • 2 tablespoons chopped cilantro
  • Salt and pepper, to taste

Instructions:

  1. Roast the Sweet Potatoes:
    Preheat oven to 400°F (200°C). Toss cubed sweet potatoes with olive oil, cumin, paprika, salt, and pepper. Spread on a baking sheet and roast for 25–30 minutes, flipping halfway, until golden and tender.
  2. Make the Vinaigrette:
    In a small bowl or jar, whisk together all vinaigrette ingredients until well combined.
  3. Assemble the Salad:
    In a large bowl, combine roasted sweet potatoes, black beans, cherry tomatoes, red onion, and avocado. Add the greens and toss gently.
