Ingredients:

  • 1 cup cooked brown rice or quinoa
  • 1 cup steamed broccoli florets
  • 1/2 cup shredded purple cabbage
  • 1/2 cup grated carrot
  • 1/2 cup roasted chickpeas
  • 1/2 avocado, sliced
  • 1/4 cup sliced cucumber
  • 2 tablespoons chopped fresh cilantro or parsley

For the Tahini Dressing:

  • 3 tablespoons tahini
  • Juice of 1 lemon
  • 1 tablespoon maple syrup or agave
  • 1 clove garlic, minced
  • Water to thin as needed
  • Salt and pepper, to taste

Instructions:

  1. Prepare all veggies and arrange them beautifully over the cooked rice or quinoa in a bowl.
  2. For the dressing, whisk tahini, lemon juice, maple syrup, garlic, salt, and pepper together. Add water little by little until desired consistency.
  3. Drizzle dressing over the Buddha bowl just before serving.
