Ingredients:
- 1/2 cup yellow moong dal (split yellow lentils), rinsed
- 1/2 cup basmati rice, rinsed
- 1 tablespoon ghee or oil (use oil for vegan)
- 1 teaspoon cumin seeds
- 1/2 teaspoon turmeric powder
- 1-inch ginger, grated
- 1 green chili, slit (optional)
- 1 cup mixed vegetables (carrots, peas, beans), chopped
- 4 cups water
- Salt to taste
- Fresh cilantro for garnish
Instructions:
- Heat oil in a pressure cooker or pot. Add cumin seeds and let them sizzle.
- Add grated ginger and green chili; sauté for 1 minute.
- Add rinsed dal and rice, turmeric, and chopped vegetables; stir to combine.
- Pour in water and salt; mix well.
- Pressure cook for 3-4 whistles or simmer covered for 25-30 minutes until dal and rice are soft.
- Stir well, garnish with fresh cilantro, and serve warm.
