Ingredients:

  • 1/2 cup yellow moong dal (split yellow lentils), rinsed
  • 1/2 cup basmati rice, rinsed
  • 1 tablespoon ghee or oil (use oil for vegan)
  • 1 teaspoon cumin seeds
  • 1/2 teaspoon turmeric powder
  • 1-inch ginger, grated
  • 1 green chili, slit (optional)
  • 1 cup mixed vegetables (carrots, peas, beans), chopped
  • 4 cups water
  • Salt to taste
  • Fresh cilantro for garnish

Instructions:

  1. Heat oil in a pressure cooker or pot. Add cumin seeds and let them sizzle.
  2. Add grated ginger and green chili; sauté for 1 minute.
  3. Add rinsed dal and rice, turmeric, and chopped vegetables; stir to combine.
  4. Pour in water and salt; mix well.
  5. Pressure cook for 3-4 whistles or simmer covered for 25-30 minutes until dal and rice are soft.
  6. Stir well, garnish with fresh cilantro, and serve warm.
